Yesterday afternoon, I asked one of my four year old daughters what she wanted for dinner, and she thought for a second and said, “Pizza!”  So we made pizza!  It sounded reasonable, we hadn’t had it for a while, and I had all the ingredients.

I made a batch of 100% Whole Wheat Pizza Crust (even though I use about half white flour in it).  The “problem” was, that this recipe makes a lot of dough.  I believe that Lindsay states that she divides the dough into 4 sections for 4 crusts.  I usually make a thicker crust, and divide it into 3 sections.  But even then, I really only needed to make 2 pizzas for our family.

So, what to do with the third dough?  I knew I wanted something sweet… something chocolatey.

And then… divine inspiration hit.  Like a ton of bricks.

Marshmallow Chocolate Rolls.

Let me say it again; Marshmallow Chocolate Rolls.

I’ll tell you what I did.

Roll your dough out like you would for cinnamon rolls.  If you are not using leftover pizza dough, and you need a good recipe for cinnamon roll dough, try HERE.

Once you have your dough rolled out, spread your dough with about half a stick of softened butter.  If you have unsalted butter, that’s probably better, but I used salted and it was okay.

Now, here’s the fabulous part.  Take a jar of marshmallow cream and spread the entire jar over your dough.  It will take a bit of patience to spread it all out… it likes to stick together.  But keep working at it.  Have I ever mentioned my love of marshmallows?  No?  Well, now you know.  I have a thing for marshmallows.

Once your marshmallow cream is spread out, sprinkle generously with chocolate chips.  I used the mini semi sweet chocolate chips and I think that probably is your best option.  The larger chocolate chips probably would be too lumpy and not as evenly spread.

Now, roll up your dough and pinch to close.  Cut dough into 12 equal sections. (See above link to get instructions for rolling and cutting, etc.)  I usually cut off the very ends, since there’s not too much rolling going on on the ends.  Then I cut the whole thing in half and place one half in front of the other.  Then I cut each of those in half again to make sure they’re even.  Then each quarter section I cut into thirds.  They get pretty even that way.

Place each lovely roll into a 9×13 casserole dish that has been smeared with butter.  Let rise for 30 minutes or so.

Bake at 350 for about 17 minutes.

Now, let me tell you what is going to happen.  They will smell amazing.  The chocolate will melt.  The marshmallow cream will be puffed up from the top of your rolls.  You will want to eat them immediately.

If you wanted to, a little cream cheese frosting would be great on top of these, but it doesn’t really need it.
